 Winter squash are a tasty source of complex carbohydrate and fiber that are relatively low in calories.  They are a source of potassium, niacin, iron, and beta carotene. Winter Squash varieties can be stored for use throughout the winter.

 

  The pumpkin patch grows a variety of squash.  These squash can be oven baked or placed in the microwave. Usually microwave in a glass dish and use high power.  They are quick and easy to prepare.  Follow the directions below and microwave the squash about 10 to 15 minutes and then add the toppings/seasonings and microwave another 5 to 10 minutes.   Enjoy! 

 

Baked Acorn Squash  (looks like an acorn-green)

Wash squash.  Cut in half.  Remove seeds.  Place on baking dish cut side down.

Bake about 30 minutes on 350. Then add the following to the inside of squash.

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste.

Bake 350 for another 10 to 15 minutes.           

 

Butternut Squash (cream colored)

Wash and peel squash.  Cut in half.  Remove seeds.

Cut into 1 " chunks.  Place in baking dish. 

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste.

Bake 350 for 30 to 40 minutes.

 

 

Cushaw (large necked-green/white striped) 

Wash and peel squash.  Slice or chunk into pieces.  Place in baking dish.

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste.

Bake 350 for 30 to 40 minutes.

Can be used like pumpkin for pies, muffins, etc.

 

 

Spaghetti Squash (smooth oval-cream)

Wash squash.  Cut squash in half.  Remove seeds.  Place on baking dish cut side down

Bake about 30 minutes on 350.  Then add the following to the inside of squash.

Add:  1/4 c Parmesan cheese, 2 Tbsp butter, garlic salt or minced garlic, and salt/ pepper to taste. Could serve with a meat sauce.

Bake 350 for another 10 to 15  minutes.
